Just a quick one today because it's FRIDAY!!
My wife came across a recipe for an eggless “Egg Salad” She
made this last night, covered it and put it in the refrigerator and this afternoon we tried this on
some of the vegan bread we found at our local health food store.
I am impressed, this really did look and taste like egg
salad even though there wasn’t a single egg in the mix.
Prep Time: 10 minutes
Ingredients:
- 1 block firm tofu, drained
- 1/3 cup Veganaise
- 1/3 cup sweet relish
- 1/2 tsp lemon juice
- 1/2 stalk celery, diced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp mustard
- dash paprika for garnish (optional)
Preparation:
In a medium-sized bowl, mash the tofu with a fork. Add
remaining ingredients and stir together until well combined. Sprinkle with
paprika for garnish, if desired.
Serve on bread with lettuce for an "egg" salad sandwich, or can be
used as a dip or a spread.I tasted this when it was fresh and wasn't at all impressed with it but after it spent the night in a covered container in the frig all the flavors blended and it tasted very different. I recommend this, cover it and leave it (at least for a couple of hours) and let the flavors come together and give it the taste you're looking for.
